Brown butter apple & vanilla crumble
From the Garden to the Kitchen: Brown Butter Apple & Vanilla Crumble
A cool afternoon in the garden deserves something lovely waiting in the kitchen.
And while I adore an elaborate dessert, there’s something particularly comforting about a simple apple crumble. Tender apples, warm cinnamon, fragrant vanilla, and a golden brown butter topping that becomes beautifully crisp in the oven.
This is the sort of dessert that doesn’t require an occasion. Just a quiet afternoon, a favorite baking dish, and perhaps a generous spoonful of vanilla ice cream.
Brown Butter Apple & Vanilla Crumble
Prep Time: 20 minutes | Bake Time: 35–40 minutes | Serves: 6
For the apple filling
5 medium Honeycrisp or Pink Lady apples, peeled and thinly sliced
⅓ cup light brown sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla bean paste
¾ teaspoon ground cinnamon
¼ teaspoon ground cardamom
Pinch of sea salt
For the brown butter crumble
½ cup unsalted butter
¾ cup all-purpose flour
½ cup old-fashioned rolled oats
½ cup light brown sugar
¼ teaspoon cinnamon
¼ teaspoon fine sea salt
Method
1. Prepare the oven.
Preheat to 350°F. Lightly butter an 8-inch square baking dish or a similarly sized ceramic baking dish.
2. Prepare the apples.
In a large bowl, gently toss the sliced apples with brown sugar, flour, vanilla bean paste, cinnamon, cardamom, and salt. Transfer to the prepared baking dish, spreading evenly.
3. Brown the butter.
Melt the butter in a small saucepan over medium heat, stirring occasionally. Continue cooking until the milk solids turn golden brown and the butter develops a warm, nutty fragrance.
Immediately transfer to a heatproof bowl and allow to cool for approximately 5 minutes.
4. Make the crumble.
Combine the flour, oats, brown sugar, cinnamon, and salt. Pour in the slightly cooled brown butter and stir with a fork until the mixture forms moist, irregular crumbs.
5. Assemble and bake.
Scatter the crumble generously over the apples, leaving some larger clusters for texture.
Bake uncovered for 35–40 minutes, or until the topping is golden and the apple filling is bubbling around the edges. If the apples need additional time, loosely cover the dish with foil and continue baking until tender.
6. Serve.
Allow to rest for 10–15 minutes before serving warm.
A spoonful of vanilla bean ice cream or softly whipped cream makes it especially lovely.
A Little Basil & Birch Note
This crumble can be assembled earlier in the day and refrigerated until you’re ready to bake. Keep the topping separate until just before it goes into the oven.
My favorite way to enjoy it is still slightly warm, curled up somewhere comfortable, with the windows open just enough to let the autumn air in.
Because sometimes the best part of a beautiful fall day isn’t what you’ve accomplished. It’s getting to come inside, put your feet up, and enjoy something homemade.
